Another zero-point soup: an invention of my own. I call it Green Soup. Bella likes it and we have it over rice for an afterschool snack.
Saute a whole chopped onion and a whole bunch of celery (preferably organic) in grapeseed oil (better for frying).
Add to several inches of water in a big soup pot. Add 5-6 roughly chopped zucchinis. Simmer until zucchini is soft. Blend it up with an immersion blender or in a regular blender.
Salt and freshly ground pepper to taste.
