Bella's favorite alouette sandwiches

These sandwiches have been a favorite ever since I learned to make them working at The Perfect Cup at White Flint Mall. They are high-calorie, so we reserve them for special occasions, like Bella’s birthday week.

You need four croissants, a small tub of alouette cheese (or rondele), four sliced hardboiled eggs (I have an egg slicer just for these sandwiches), and sliced tomatoes.

Slice open the croissants and toast them upside-down very lightly. Spread the alouette cheese on both halves. Spread the sliced egg on the bottom half and the tomatoes on the top half. Toast or broil until everything is hot and bubbly.

Heavenly calories!
