Mom's Mac and Cheese

Homemade macaroni and cheese is not the best way to watch your figure, but Bella begs for it and occasionally I cave. This recipe is from The Cabbagetown Cookbook (a cafe in the same town as The Moosewood Cafe. good grief, that’s an unfair number of good health food cafes for one town.)

I usually double or quadruple the recipe. Also I have a secret energy-saving tip for cooking the pasta: Bring the water to boil and add the pasta. Cover the pot and turn the heat off. Twenty minutes later when the other ingredients have been assembled, the pasta is al dente. This method is great for when you need pasta for a casserole and you don’t have to be fussy about how well or not well it is cooked.

3/4 c pasta (I use the whole box/bag)

3/4 c soft bread crumbs (I use 1/2-1 block tofu crumbled)

2 tbs butter (I skip this)

1/2 # Cheddar (I use organic and if I don’t have enough I throw in parmesan or whatever cheese that is in the fridge.)

1 1/4 c hot milk (I use soy)

1 onion, finely chopped (I grate a large onion)

1/4 c finely chopped parsley (I have never remembered to buy the parsley…)

sharp mustard (I use lots of dijon)

paprika

I also add a generous dash of hot sauce and several tablespoons of relish.

1. Cook the macaroni.

2. In a large bowl, combine the cheese, tofu, butter, and cheese. Pour in the hot soy milk. Add the grated onion and salt. Add mustard, hot sauce, and relish.

3. Add beaten eggs. Add the cooked pasta.

4. Pour into a well-buttered casserole. Sprinkle with paprika.

5. Bake at 350 for 1/2 hour or until golden and firm.

6. For best flavor, let sit for 10 minutes before serving.

Yum. I think it’s ready… I can smell it now! See ya…

mo' Bella

As you might have guessed, one of Bella’s favorite past-times is taking pictures of herself (and her friends). Here are some from yesterday’s school bus ride home. (Oops, sorry, I mean her Escalade ride home – the bottom one is on the bus. I swear I do make her ride the bus sometimes. And the Escalade is not mine – I’m trying to reduce the my plastic bag intake this month like Tiffany!)

that's exciting!

Two people have downloaded the first chapter of the thesis! Maybe one of them will read it and give me feedback. I think it’s much better than the draft I turned in last summer. At this time the only people in the world who have read this are myself and Ellen and maybe Caryn – you could be the lucky fourth!

In case you finish that first chapter and you’re just dying to see what’s next, I thought I’d post the second chapter as well (25 pages). (It’s called chapter 3 because I absorbed chapter 2 into the rest of the thesis. couldn’t stand on its own.)

Goethe quote from Barthe's A Lover's Discourse

Just cut this line from the thesis. It’s lived through many a draft (and is now immortalized in the catalog essay being published next month) but tonight it got cut out of the thesis.

“Either woe or well-being, sometimes I have a craving to be engulfed.”

It’s what I am finding in general in my writing: At first I needed a lot of quotes from other people to develop my ideas. Now I am going back through and cutting out that scaffolding. My ideas are strong enough to stand on their own. My ideas are growing up!

It's getting close…

I spent the entire weekend going over every word of my draft with my friend Ellen. (Thank you Ellen!!) I’m thinking that it’s getting pretty close to being done. I’ve typed in all the changes to the first chapter/intro (which is 26 pages) and turned over the draft to another (extremely) literate friend, Caryn, for proofing.

I am in the process of typing in all the edits into the second chapter tonight.

P.S. I’m calling this draft “everclear” after a project that my brother has been working on. Apparently big money people like to randomly name all their  projects. Everclear just makes me think of jello shots.

AARP Tax Help

I don’t even know what AARP stands for, but I know the AARP Foundation offers an incredible service locally every tax season. They train smart retired folks to help people file taxes for FREE! And not only that, the AARP Foundation Tax-Aide has access to IRA software and can submit your tax return electronically.

Did I mention it is FREE? I’ve used this service for the last three years and every year I am amazed – because the people there are very informed and computer-savvy. (These folks are also no-nonsense, and will tell you what’s what) This year, AARP Tax-Aide is located at the Saint Mary of the Valley Church on Church Street in Yucca Valley. They operate from February 1 through April 15. The rest of the year, an AARP representative can be found at Pomona First Federal on Wednesdays from 9 – 11:00 am.

AARP Tax-Aide is open Monday to Wednesday, 9:00am – 3:00pm. Call 760-365-4850 to make an appointment. You’ll need last year’s tax returns, social security cards for yourself and all dependents, W2 forms, and a copy of your house contract. If you don’t live in the hi-des, check their website to find one near you here.

I discovered that I am making $46,665 a year (ten thousand more than last year??). That lets me and Bella live like the queen and princess of Sheba here in Joshua Tree. I owe the feds $331, but I’ll be getting $1,107 from the state of California. Woo hoo! That will go towards the new house fund.

Next year I could apply to work as a Instructional Strategies Coach for a private firm in Monrovia and make somewhere between $65,000 and $80,000. Or I could break away from education and take a dinky job at publishing firm or magazine company and make probably something closer to $30,000. Sigh.

The Downside of the Computer Age

It is very disappointing to watch a TV show series on DVD and catch up to the season. Here we are blissfully watching several episodes back-to-back of Grey’s Anatomy every night and then, abruptly there’s no more episodes left. None! I have to wait until NEXT WEEK!

You know when you’re walking on a moving sidewalk at the airport, walking, walking walking, then suddenly you hit the end? Your legs are still moving, but you feel like you’re not going anywhere? That’s what it feels like. You’re on a roll and then you’re not.

I don’t want to catch up ever again.
